Recipe | Peanut Butter Brownies
Chocolate chips and almonds add a sweet and salty crunch.
Servings: 2 hungry people or 1 pan of brownies

Ingredients:

1 cup coconut oil, melted
1 cup nut butter (peanut, sunflower, almond)
1 cup sweetener (honey, molasses, maple syrup or sugar)
2 eggs
3 cups flour (we like 1 cup coconut flour, 2 cups almond flour)
1 tsp baking soda
1 tsp vanilla extract
Chocolate chips
Nuts (almonds, walnuts, hickory nuts)

Supplies:

Saucepan or bowl
Stirring tool
Measuring tools
Baking dish (9"x 13")
Cutting board
Sharp knife or spatula

Instructions:

Preheat oven to 375*F. Measure and then melt your coconut oil into liquid form. Add nut butter and sweetener. Mix them all together thoroughly with your stirring tool. Once smooth, add 2 eggs into the mixture and stir in evenly. Next add flour, baking soda & vanilla extract. Mix until a soft and creamy texture results. Cool in fridge until dough firms up, maybe half an hour or so. Pour dough into your baking dish and flatten evenly. Sprinkle chocolate chips and nuts on top. Gently press them into the dough. Bake for 10-15 minutes or until done in center. Carefully remove from oven & let cool on the counter. Once the brownies have cooled, return to the fridge until firm. Using a sharp knife, cut into small 1'x1' squares. Store in fridge or freezer & you'll have a cold, tasty, healthy, go-to snack you can grab when you are craving something sweet.

Tips:

+ You can definitely eat this warm right out of the oven. It's gooey and decadent just like a skillet brownie would be. A dollop of whipped cream or ice cream wouldn't hurt either.
